A simple non linear equation can be used with high confidence to predict the SFT of pig thighs, irrespective of their gender, starting from carcass traits and weight of trimmed thighs. The overall predictive ability allowed correct classification of 76% of the examined pig thighs. It is worth noting that the precision of the proposed equation also depends on the accuracy of the carcass measurements. A further improvement of the predictive equation will be based on the definition of the critical range for each carcass trait that simultaneously produced a desired SFT level according to the disciplinary pecifications
