The analytical techniques employed in the determination of phenolic compounds can be divided into two groups: fast determinations involving spectrophotometry and high resolution techniques involving chromatography. In the present work the chemical structure of anthocyanin derivatives of Lacrima di Morro d'Alba (a D.O.C. wine produced in the region of Marche, Central Italy) was investigated with LC-MS-MS (high performance liquid chromatography - tandem mass spectrometry). By means of this technique, the identification of the following pairs of isobar anthocyanin derivatives was accomplished: petunidin-3-(p-coumaryl)-glucoside and peonidin-3,5-diglucoside; peonidin-3-(p-coumaryl)-glucoside and malvidin-3-glucoside-4-vinylphenol; peonidin-3-(p-coumaryl)-5-diglucoside and malvidin-3-(caffeoyl)-glucoside-4-vinylphenol. Finally, the presence of caffeoylglucoside derivatives of anthocyanins, and cyanidin derivatives was excluded by using LC-MS-MS.

Abstract
