This contribution analyzes an industrial oven with combined RF (27.12 MHz) and combustion heating. The cooking matter is placed in the central part of the oven, where two parallel metal plates act like the armor of a condenser. The electromagnetic and thermal analysis are alternately used to simulate the whole cooking, taking into account all variable parameters during the process. In the oven, the food grows, changing its geometry, dielectric constant, and thermal characteristics. Two ovens are realized and simulated: little experimental ovens to obtain electromagnetic and thermal parameters of the mixtures, useful to design a big industrial oven.
