This contribute analyzes an industrial oven with combined RF (27.12 MHz) and combustion heating. The cooking matter is placed in the central part of the oven, where two parallel metal plates act like the armors of a condenser. The electromagnetic analysis and the thermal analysis are alternately called to simulate the whole cooking, tacking in account all variable parameters during the process. In the oven, the food grows changing its geometry, its dielectric constant and its thermal characteristics. The electromagnetic simulation of the entire industrial oven is provided using the results of a combined analysis in a little experimental oven.
