This chapter deals with the issue of cattle feeding and more specifically on the complementary feedstuffs which were promoted by agricultural scientists during 19th and early 20th Century. Among these materials, oilseed cakes played a crucial role. We consider the multiple levels of negotiation that led to the commercialisation of oilseed cakes in France and Italy.
