Starting from an alternative decomposition of the subgrid stresses, we present a tensorial turbulent viscosity for a reduced description of small-scale turbulence. The formalism is based on velocity increments and, through the analysis of Direct Numerical Simulation data, is recognized to capture relevant flow features that are actually missed in scalar approaches.
